I made your apple cake, veganized. The first round, I did it in a tube pan, and while it set up reasonably well, I flipped the pan a little too soon, and because it was sooooo moist, it sort of came apart. The second time, I did it in muffin tins and it looks fantastic. We were debating which way it sounded better...warmed with a bit of melted butter, or warmed served with a bit of caramel and some vanilla ice cream.
