Kinda Meme-ish, I guess...

Several friends of mine have undertaken the goal to cook at least one new recipe a week this year.

I haven't actually committed to that goal as they have, but I've decided to make an effort to try and cook new things frequently. (I didn't commit to the one new recipe a week goal because between the baby and Cayne's sometimes unpredictable work schedule, I just don't expect that "once a week" is feasible right now-Cayne is starting his crunch time at work which will last eight to twelve weeks, and if we're lucky enough that I get pregnant some time this year, it's just not likely to happen. And that's okay-when I have different responsibilities, I'll try for one a week, I think.)



Here's the recipe...

3 large bell peppers (I used red, green and orange because the grocery store didn't have three red.)
A large onion
8 oz of mushrooms, sliced
1 1/2 lbs of Boca Crumbles or ground beef
3 cups of tomato soup or two cans of condensed tomato soup
28 oz can of crushed tomatos
6 oz tomato paste
3 1/2-4 cups of broth or stock (your choice-veggie, beef, chicken, etc. I'm not sure fish stock would go so well in this though.)
1 1/2-2 cups of cooked rice
Salt, pepper and chopped garlic to taste

1. Chop the onions and the bell pepper into large, but bite sized pieces.
2. Cook the onions, mushrooms, "meat" and peppers until the meat is browned and the veggies are soft. (I added a little chopped garlic to the pot while I did that.)
3. Add the crushed tomato, tomato soup, tomato paste, and stock or broth to the pot. Season and simmer for about 30 minutes.
4. Add the cooked rice and let it simmer for another ten or fifteen minutes.
5. Serve with cheese to sprinkle on top and hot sauce if desired. (I had Parmesan on mine and no hot sauce, Cayne had hot sauce a Mexi-cheese blend.)

It's fairly quick, very filling, and would be easy to slip other vegetables into if you wanted to-I may add carrots or green beans to it in the future since my stuffed peppers typically have beans and rice rather than meat.

Only one? I'm doing two (of course, I do cook virtually every night). And three meatless meals a week. For a couple of weeks there the new recipes were meatless by default.
