Corn and Tomato Salad Recipe

4-5 ears of fresh corn
1 pint of grape or cherry tomatoes
1 jar green chilis (jalepenos would work too if you like more heat)
1/3 cup of diced red onion
1/2-1 cup shredded cheese (I like the Mexican or similar-something with cheddar, or monterey jack and a bit of seasoning.)
Cook corn in a pot of boiling water. Set aside to cool.
Slice tomatoes in half and set aside.
When the corn is cool slice it off the cob and toss with other ingredients.
Dressing:
4 Tbsp vegetable oil
4 tsp. lime juice
2-3 cloves garlic(although I actually prefer the kind in the jar that I get in the produce section of the store)
cumin
chili powder
salt
pepper
Mix according to your taste in a jar with a very tight lid. (My taste is lots of cumin, and more lime juice and more garlic. Chill briefly then toss with the salad.
Chill the whole mess and serve. Makes about 5-6 cups of salad.
