Can you bake cookies?

I eat a lot of oatmeal cookies right now.
I eat them because they are the only way I can stomach oatmeal (I really hate oatmeal) and so I eat oatmeal cookies. I eat oatmeal cookies because oatmeal is good for milk production, which I have issues with.
But I'm bored with mine.
So I want your oatmeal cookies. Make me your best oatmeal cookies. With stuff in them. (Ask me what stuff works-no coconut for example.) And then send me those cookies.
Please? I need new and different oatmeal cookies.

2 c flour
1 1/3 c rolled oats
1 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 2/3 c sugar
2/3 cup canola oil
2 T molasses
1 c canned pumpkin or cooked pureed pumpkin
1 tsp vanilla
Mix wet and dry ingredients separately and then fold together. Drop by tablespoons onto greased cookie sheets. Slightly flatten each cookie with a fork. Bake for 16 minutes at 350. These cookies are best when they've cooled and set a bit.

Date: 2010-01-22 03:34 am (UTC)It's not as strong as pumpkin pie, but definitely pumpkin tasting. Everyone I've ever given them to has liked them. But I don't know how everyone else feels about pumpkin. I, for one, love it.
They're kind of a chewy cookie. I've made them to eat for breakfasts... :)

The other breakfast my NP reccommends is the whipped butter honey on Ezekiel sprouted toast, I wonder if that is good for milk production..

Date: 2010-01-22 04:43 pm (UTC)You can leave out the toasted coconut entirely or substitute something you like more than coconut - another nut would probably work fine. The texture is not at all mushy because you cook the oats in oil before you boil them. And you can vary the herbs and spices so it's not exactly the same every time.
For cookie recipes, I recently tried the oatmeal cookie recipe on the back of the Toll House Butterscotch Chips bag. It wasn't really my favorite, but everyone else who tried them said they were really good.

I did the dehydrating myself if that matters.
I already noted no coconut- are you averse to the flavor of coconut (as in, no coconut oil) or is it limited to no dried/shredded coconut?
Is butter okay? its organic, local(to me). I assume its alright that my kitchen is far from kosher?

Date: 2010-02-24 04:22 am (UTC)I get very itchy from coconut meats-dried, shredded or raw, and as a result, I avoid the meat entirely. I limit/avoid the oil just in case it's some kind of true sensitivity in hopes of not finding out it's something serious.
As for the fruit-I like most dried fruits. Pears sometimes take on an odd texture to me, but that's not so much a "dislike" as "Sometimes eating a slice of dried pear gets weird." My favorites on your list are apricots, peaches and cherries. My least favorite is pears. My oatmeal cookies often have chocolate chips and dried apricots or golden raisins. I've never tried oatmeal peach cookies and that sounds really yummy. I may have to try it next time I have dried peaches around.
Butter is fine. Miri hasn't shown any food sensitivities so far. And it's fine that your kitchen is, as you put it, "Far from Kosher"-I wouldn't have made the request if it weren't. I know most of my friends don't keep Kosher kitchens.
