melebeth and some serious thinking, it's unlikely that I'll be ready to take GREs in six weeks. In which case, I'll probably do grad school applications for NYU, UPenn and Johns Hopkins this year. Assuming I can come up with the money or that I qualify for fee waivers.
None of this is absolutely decided yet. But this might be the right time. If I get rejected this year, there's always next year.
I'm so unsure about this being the right thing to do. But NYU has a specialization in Health Education in Schools and Colleges. And if that's not exactly what I think I want to do, then I'm really confused.

It's not that hard of a test (I found it easier than I found the SAT, if my memories of both are accurate). If it's still computer based, probably the best bit of advice you'll get from anyone is to take as much time as you need to get the first few questions on each test right. (I should note that I found the General GRE fairly easy. The Subject-specific GRE was a kick in the teeth.)
I found choosing and applying to grad schools one of the oddest experiences of my life. It's one of those situations where people seem to assume you know what you're doing, even though they know you don't. You sort of have to muddle through it.
As for applying itself, my general attitude is to apply unless you're pretty sure you don't want to go there. I mean, the worst they can say is 'no thanks.' (It would be nice if more departments were like the Utah CS department; I didn't pay an application fee until I not only got accepted but decided to attend.)
As I'm sure you've discovered, the applications run from sensible to what-the-hell-are-they-thinking. I invite you to look at UC Berkeley's forms for an example of the latter.
