Someone opened the box of plastic knives upside down. I'm sitting there, wrestling with it, so that I can put it away (since I had to take it out to get the box of spoons out to make my tea) and a co-worker comes in.

She examines the container of cookies on the counter, and asks if I baked them. I told her yes, I did. She replies "Oh good. They had the look of something you baked, which is yummy. You bake really good cookies."

She breaks a cookie in half, and wanders off. I make my tea and go back to my office. She passes by my office after a conversation with someone here, and says to me, "I broke that cookie in half, and now I'm going back for the rest...which I should have just done in the first place."

Yay. People like my cookies.

(These were a chocolate-toffee cookie, usually I do this recipe with raspberry chips, but I couldn't get them last week, so I did toffee instead. Need to experment with lemon cookie recipe soon though.)

i made toffee cookies for the littles' picnic, they were da bomb(tm). no chocolate though, didn't need it, though i've been meaning to try it at some point just to see how i feel about it. where do you find raspberry chips? and can i have the lemon cookie recipe? i haven't found/concocted a good enough one on my own so far.

Hershey's makes a raspberry chip. I can find it at some of the grocery stores, but not all of them, in the aisle with the other chips. I know, for example, the Giant on Duke street usually has them, but the Giant on Route 1 at Beacon Hill doesn't.

If I come up with a good lemon cookie recipe, I'll be happy to share. I have a sugar cookie recipe that I tend to use half vanilla, half lemon extract in, which has a nice flavor, but it isn't a "lemon cookie" per se.

I enjoy baking cookies, but living alone makes it far less pleasurable, since I'm not a big fan of the outcome. The process for me is much more exciting. My co-workers know this, and are often the taste testers, or recipients of my kitchen time. I don't bake as often as I'd like, simply because I have to be careful about overfeeding people, lest they decide they don't want more.

I will very happily try your recipe for lemon bars, since I don't have one that I like, although it's not what I'm actually looking for, it's something I don't have in my collection. I'm looking for a cookie type lemon cookie, as well, which I have a recipe to experiment with, and might try out tonight, if I'm feeling motivated. The Silpat you gave me is a wonderful thing; I can't wait to get another.

If you would like me to save some of the toffee cookies for you, let me know. I'll rescue them from the kitchen, and give them to you tomorrow night (I assume you're coming over, but I could be wrong.)

Joy of Cooking has a sugar cookie recipe with 14 variations, one of which is a pretty good lemon cookie. I'm not sure if the dough is heavy enough to work with chips, but now I want to try it if I can find some of these raspberry chips.

They're usually in the aisle with the chips, they're Hershey Chocolate Raspberry chips.

Stop and Shop sometimes has them, but it's inconsistent. I can get them at one store but not another.
